So week one of the three month food & drink challenge has flown by. Rachael has written a new food & drink blog post, well worth a read. For my girlfriend and I, it has been a tough week…that is work wise we’ve been snowed and I fell ill (i’m better now). At times we’ve wanted a mug of tea with a biscuit or two, but have resisted and continue we will.
We’ve eaten British, Indian and Italian food during the last week. Right now though I want to tell you about the lovely homemade vegetable stew and dumplings my wonderful girlfriend made the other day.
What you need
– Vegetable stew bag
– Stock (brand we used is Knorr Vegetable Stock granules)
– Cornflower
– Shredded Vegetable Suet (brand we used is Atora light)
– and other bits and pieces
How to make it
Peel and chop the vegetables into chunks and chuck into a casserole dish. Using the stock and cornflower mix to the desired thickness and quantity you want. We did enough for four people (that is with a generous portion of mash potatoes accompanying) and it took forty-five minutes on gas mark 5.
On our suet box my girlfriend found a dumpling recipe. So if you buy the ‘Atora light’ it should be there, else a quick google should help you out. After the stew has been cooking for forty-five minutes she removed it from the oven. She then added the dumplings and cooked for another fifteen to twenty minutes.

Hmm, that looks soo nice. Bet it tastes amazing?!:) I love Stews and thats the only thing, well almost only thing that I like about Fall/ Winter. All the yummy Stews&Soups that fills your tummy with veggies and help to keep you warm during the day! 🙂 Will defo make a Stew this weekend. Its about time! It was a lovely stew and the secret I think is the stock. That particular brand gives it the oomph that is required.
I love soups also and will be making lots during autumn, winter and sping. Homemade soup is in a league of its own compared to canned.
